My Favorite Meat Loaf

 On a cold November day, nothing says "Comfort Food" like Meat Loaf.

 Recipes for Meat Loaf are often filled with extra carbs to add bulk, but this one is primarily meat so it's primarily protein.

 Serve with mashed sweet potatoes and steamed spinach for a balanced and beautiful meal.

 Makes 4 servings

 Each serving contains:

 250 calories

 25g protein

 Ingredients

 12 ounces grass-fed ground beef

 1 ounce sweet potato/corn tortilla chips

 1 ounce whole grain crackers

 1 egg white

 1/4 cup ketchup

 Instructions

 1. Blend crackers and chips in blender until crushed fine.

 2. Mix all ingredients together in a bowl evenly until blended.

 3. Press into a small bread/loaf pan or into 8 cups of a muffin pan.

 4. Bake at 350 degrees for 40 minutes and cool for 5 minutes.
