Garden Salad Supreme

The end of summer can be tough around here because gray skies will be returning soon. But one good thing about this time of year is harvesting the bounty our gardens and fruit trees provide. Follow these high-fiber, low-calorie salad recipes and enjoy their bright colors and immense flavor.

 Ingredients

 1 cup chopped red Russian kale without stems

 1 cup chopped romaine

 1/2 cup rainbow chard stalks

 1/2 cup tomatoes chopped

 1/2 cup lemon cucumbers

 1 ounce cheddar finely shredded

 1 TBSP salad dressing

 Instructions

 Mix all ingredients together in a large bowl and serve!

 Fresh Fruit Salad

 Ingredients

 3 red plums pitted and chunked

 1 small mango peeled and chunked

 1 large pear cored and chunked

 2 TBSP nonfat plain yogurt

 2 TBSP unsalted almonds chopped

 Instructions

 Combine all ingredients in a large bowl and serve!
